Ingredients
2 slices thick-cut sourdough bread
1 large ripe avocado
2 fresh eggs
1 tablespoon white vinegar
2 tablespoons extra virgin olive oil
1/2 lemon, juiced
Sea salt to taste
Black pepper to taste
Red pepper flakes (optional)
Fresh herbs for garnish
Instructions
1. Fill a medium saucepan with water, add vinegar, and bring to gentle simmer.
2. Toast bread slices until golden brown and crispy.
3. Cut avocado in half, remove pit, and mash with lemon juice and salt.
4. Create whirlpool in simmering water and carefully add eggs one at a time.
5. Poach eggs for 3-4 minutes until whites are set but yolks remain runny.
6. Spread mashed avocado evenly on toast slices.
7. Remove poached eggs with slotted spoon and place on avocado toast.
8. Season with salt, pepper, and red pepper flakes.
9. Drizzle with olive oil and garnish with fresh herbs.
10. Serve immediately while toast is still warm.
