Instructions

- Mash the avocado in a bowl with the lemon juice, salt, and pepper.
- Bring water to a gentle simmer in a separate pot.
- Create a whirlpool and carefully drop the egg into the center.
- Cook the egg for about 3 minutes.
- Lift the poached egg out of the water with a slotted spoon.
- Spread the creamy avocado mixture on the toasted bread, and place the poached egg on top.
