Instructions

  1. Start by toasting the bread slices until they turn golden brown.
  2. While the bread is toasting, bring a pot of water to a gentle simmer.
  3. Crack each egg into a small bowl, then carefully slide each egg into the simmering water.
  4. Cook it for about 3 to 4 minutes for a runny yolk.
  5. Mash the ripe avocado in a separate bowl with a fork until creamy.
  6. Add a pinch of salt, some pepper, and a squeeze of lemon juice if desired.
  7. Spread the mashed avocado generously over the toasted bread slices.
  8. Carefully lift the poached eggs from the water and place one on each slice of avocado toast.
  9. Sprinkle red pepper flakes on top if you enjoy spice.
