- 1 ripe avocado
- 2 eggs

Instructions
- Start by toasting the bread slices until they turn golden brown.
- While the bread is toasting, bring a pot of water to a gentle simmer.
- Crack each egg into a small bowl, then carefully slide each egg into the simmering water.
- Cook it for about 3 to 4 minutes for a runny yolk.
- Mash the ripe avocado in a separate bowl with a fork until creamy.
- Add a pinch of salt, some pepper, and a squeeze of lemon juice if desired.
- Spread the mashed avocado generously over the toasted bread slices.
- Carefully lift the poached eggs from the water and place one on each slice of avocado toast.
- Sprinkle red pepper flakes on top if you enjoy spice.
- Serve your beautiful creation immediately and enjoy!
Notes
Store leftover mashed avocado in an airtight container with plastic wrap pressing against its surface to keep it fresh for about 1 day.
