  • 2 ripe avocados (approximately 400g)
  • 4 large eggs
  • 4 slices whole-grain or sourdough bread
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp freshly squeezed lemon juice

Instructions

  1. Start by toasting the bread slices in your toaster until they’re golden brown and crispy.
  2. While the bread toasts, cut the avocados in half, scoop out the flesh into a bowl, and mash lightly with a fork.
  3. Mix in the salt, pepper, and lemon juice until you reach a smooth yet chunky consistency.
  4. For the eggs, poach them in a small pot of simmering water. Create a whirlpool in the water and gently slide each egg in.
  5. Cook for about 3 minutes if you like your yolks runny.
  6. Now it’s time to assemble! Spread the mashed avocado generously on each slice of toast and top each layer with a poached egg.
  7. Add a sprinkle of additional salt and pepper if desired, and feel free to get creative with toppings like chili flakes or crumbled feta cheese.
