Ingredients
8 oz mixed mushrooms (cremini, shiitake, or oyster), sliced
3 cloves fresh garlic, minced
2 tablespoons olive oil
1 tablespoon butter (or vegan alternative)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh thyme leaves
1 tablespoon balsamic vinegar
4 slices quality bread (sourdough or whole grain)
2 ripe avocados
1 tablespoon lemon juice
1/4 teaspoon sea salt
Red pepper flakes (optional)
Fresh herbs for garnish
Instructions
1. Toast bread slices until golden and crispy. Set aside.
2. Heat olive oil and butter in large skillet over medium-high heat until butter foams.
3. Add sliced mushrooms in single layer. Cook without stirring for 3-4 minutes until golden.
4. Stir mushrooms, add garlic, salt, pepper, and thyme. Cook 2-3 more minutes until fragrant.
5. Add balsamic vinegar and cook 30 seconds more until slightly reduced.
6. Meanwhile, mash avocados with lemon juice and sea salt until smooth but chunky.
7. Spread avocado mixture evenly on toasted bread slices.
8. Top generously with warm garlicky mushroom mixture.
9. Garnish with red pepper flakes, fresh herbs, and drizzle of olive oil.
10. Serve immediately while toast is still crispy.
Notes
Toast bread until deeply golden for best texture contrast.
Don’t overcrowd mushrooms in pan for proper browning.
Add lemon juice to avocado immediately to prevent browning.
Serve immediately after assembly for optimal texture and flavor.
