Instructions
- Toast the slices of bread until golden brown.
- While the bread is toasting, bring a small pot of water to a gentle simmer.
- Crack the eggs into the simmering water and poach them for about 3-4 minutes, or until the whites are set and the yolks are runny.
- In a bowl, mash the avocado with a fork. Add salt, pepper, and a squeeze of lemon juice if you desire.
- Spread the mashed avocado evenly onto the toasted bread.
- Top each slice with a poached egg.
- Sprinkle with red pepper flakes and additional salt and pepper to taste.
- Drizzle with olive oil if desired, and serve immediately.
