Description
A fresh and flavorful Asian Chicken Cranberry Salad with tender chicken, crisp greens, and sweet cranberries.
Ingredients
4 chicken breasts, boneless & skinless
2 tbsp soy sauce
1 tsp sesame oil
1 tsp garlic powder
1/2 tsp ginger
Salt & pepper to taste
2 cups mixed greens
1/2 cup dried cranberries
1/4 cup sliced almonds
Optional: sesame seeds, green onions
Instructions
1. Preheat oven to 400°F (200°C).
2. Season chicken with soy sauce, sesame oil, garlic, ginger, salt, and pepper.
3. Roast or grill chicken for 20–25 minutes until cooked through.
4. Let chicken rest for 5 minutes, then slice thinly.
5. In a large bowl, combine greens, cranberries, and almonds.
6. Top with sliced chicken.
7. Drizzle with dressing or additional soy-ginger sauce.
8. Garnish with sesame seeds and green onions.
Notes
Store leftover chicken in airtight container for up to 3 days.
Prepare salad ingredients ahead and combine just before serving.
