Ingredients

4 large flour tortillas

2 medium Honeycrisp apples, cored and thinly sliced

1 cup shredded mild cheddar cheese

2 teaspoons ground cinnamon

2 tablespoons brown sugar

1/4 teaspoon nutmeg

1 teaspoon vanilla extract

3 tablespoons butter

Pinch of salt


Instructions

1. Heat skillet over medium heat while preparing ingredients.

2. Combine sliced apples with cinnamon, brown sugar, nutmeg, vanilla, and salt in mixing bowl.

3. Melt 1 tablespoon butter in heated skillet.

4. Place one tortilla in pan, sprinkle half with cheese, leaving 1-inch border.

5. Add spiced apple mixture over cheese, top with more cheese.

6. Fold tortilla in half and cook 2-3 minutes until golden brown.

7. Carefully flip and cook 2-3 minutes more until second side is golden.

8. Remove from heat and let rest 2-3 minutes before slicing.

9. Repeat with remaining tortillas and filling.

10. Cut into wedges and serve immediately.

Notes

Pat apple slices dry to prevent soggy quesadillas.

Don’t overfill tortillas or filling will spill out during cooking.

Whole wheat tortillas work well for extra fiber.
