2 cups fresh apple cider

2 teaspoons fresh thyme leaves

1 tablespoon fresh rosemary, chopped

2 tablespoons olive oil

1 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 cup chicken broth


Instructions

1. Remove chicken from refrigerator 30 minutes before cooking and pat completely dry.

2. Season chicken generously with salt and pepper on both sides.

3. Preheat oven to 375°F and prepare all glaze ingredients.

4. Heat olive oil in large oven-safe skillet over medium-high heat until shimmering.

5. Sear chicken skin-side down for 4-5 minutes until golden brown and crispy.

6. Flip chicken and sear another 3 minutes, then remove from pan.

7. Sauté garlic and shallot in same pan for 2 minutes until fragrant.

8. Add apple cider, vinegar, mustard, thyme, and rosemary, stirring to combine.

11. Remove chicken and place pan on stovetop over medium heat.

12. Whisk in butter and reduce glaze until thickened, about 5 minutes.

13. Pour glaze over chicken and let rest 5 minutes before serving.

Notes

Use fresh apple cider, not apple juice, for best flavor results.

Don’t skip the resting time – it allows juices to redistribute for maximum tenderness.

If glaze browns too quickly in oven, tent with foil and reduce temperature to 350°F.
