Ingredients
2 cups fresh apple cider
32 oz cream cheese, room temperature
1 cup granulated sugar
4 large eggs, room temperature
1/3 cup heavy cream
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 1/2 cups graham cracker crumbs
4 tablespoons melted butter
3 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
Instructions
1. Reduce apple cider in saucepan over medium-high heat until it measures 1/2 cup, then cool completely.
2. Preheat oven to 325°F and wrap springform pan with foil.
3. Mix crust ingredients and press into pan bottom.
4. Beat cream cheese until smooth, gradually add sugar.
5. Add eggs one at a time, then cooled cider reduction, cream, flour, vanilla, and spices.
6. Pour filling over crust and place in water bath.
7. Bake until center is almost set and reaches 150°F, about 60-70 minutes.
8. Cool in oven with door ajar for 1 hour.
9. Remove and cool completely before refrigerating overnight.
Notes
Use fresh, unfiltered apple cider for best flavor concentration.
All ingredients must be at room temperature for smooth mixing.
Water bath prevents cracking and ensures even baking.
Cheesecake improves in flavor after overnight chilling.
