Ingredients
8 cups day-old bread, cut into 1-inch cubes
4 medium apples, peeled and diced
4 large eggs
2 cups whole milk
1 cup heavy cream
3/4 cup granulated sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
4 tablespoons butter, melted
Instructions
1. Preheat oven to 350°F and butter a 9×13 inch baking dish.
2. Arrange bread cubes and diced apples evenly in prepared dish.
3. Heat milk and cream in saucepan until steaming but not boiling.
4. Whisk eggs with sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
5. Slowly pour warm milk mixture into egg mixture, whisking constantly.
6. Pour custard mixture evenly over bread and apples.
7. Press down gently to ensure all pieces are submerged.
8. Let rest for 15 minutes to allow bread to absorb custard.
9. Bake for 45-55 minutes until golden brown and center reaches 160°F.
10. Cool for 10 minutes before serving with vanilla custard sauce.
Notes
Day-old bread works best – fresh bread becomes too mushy.
Brioche or challah creates the richest texture.
Can be assembled 24 hours ahead and refrigerated before baking.
Add 10-15 minutes to baking time if starting from cold.
Leftovers keep covered in refrigerator for up to 4 days.
