A quick and flavorful dish combining turmeric chicken with rice, perfect for family meals.
Ingredients

- 1 lb chicken breast, cut into bite-size pieces
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 tsp turmeric
- 1 tsp paprika
- 1 cup jasmine or basmati rice, rinsed
- 2 cups low sodium chicken broth
- 2 cups fresh spinach
- Juice of ½ lemon
- Salt and black pepper, to taste
- 2 tbsp Greek yogurt for serving (optional)
Instructions
- Heat the olive oil in a large pan over medium heat. Once hot, add the chicken and cook until it turns lightly browned and is cooked through.
- Add the diced onion, minced garlic, and grated ginger. Stir until the onion becomes softened and fragrant.
- Sprinkle the turmeric, paprika, salt, and pepper over the chicken. Stir well to coat the chicken.
- Pour in the rinsed rice and toss it with the chicken and spices.
- Carefully pour in the chicken broth and bring it to a gentle boil.
- Reduce the heat to low, cover the pan, and let it cook for about 15 minutes until the rice is tender and the liquid is absorbed.
- Stir in the fresh spinach until it wilts.
- Squeeze the lemon juice over the dish and adjust seasoning to taste.
- Scoop into bowls and top with Greek yogurt if desired.
Notes
Serve with a side of steamed broccoli or a fresh salad for extra crunch. Can be stored in the fridge for up to 4 days or frozen for up to 3 months.
