Description

A quick and flavorful dish combining turmeric chicken with rice, perfect for family meals.


Ingredients

  • 1 lb chicken breast, cut into bite-size pieces
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 cup jasmine or basmati rice, rinsed
  • 2 cups low sodium chicken broth
  • 2 cups fresh spinach
  • Juice of ½ lemon
  • Salt and black pepper, to taste
  • 2 tbsp Greek yogurt for serving (optional)

Instructions

  1. Heat the olive oil in a large pan over medium heat. Once hot, add the chicken and cook until it turns lightly browned and is cooked through.
  2. Add the diced onion, minced garlic, and grated ginger. Stir until the onion becomes softened and fragrant.
  3. Sprinkle the turmeric, paprika, salt, and pepper over the chicken. Stir well to coat the chicken.
  4. Pour in the rinsed rice and toss it with the chicken and spices.
  5. Carefully pour in the chicken broth and bring it to a gentle boil.
  6. Reduce the heat to low, cover the pan, and let it cook for about 15 minutes until the rice is tender and the liquid is absorbed.
  7. Stir in the fresh spinach until it wilts.
  8. Squeeze the lemon juice over the dish and adjust seasoning to taste.
  9. Scoop into bowls and top with Greek yogurt if desired.

Notes

Serve with a side of steamed broccoli or a fresh salad for extra crunch. Can be stored in the fridge for up to 4 days or frozen for up to 3 months.
