Description

A quick and easy dish featuring sweet and spicy chicken paired with crispy Brussels sprouts, perfect for family gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb/450g)
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon honey (optional)
  • 2 cups Brussels sprouts, trimmed and halved
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a small bowl, mix together the olive oil, soy sauce, sweet chili sauce, rice vinegar, garlic powder, ginger, and honey (if using).
  3. Season the chicken breasts with salt and pepper, then coat them with the sweet chili mixture.
  4. Place chicken in the air fryer basket and cook for 12-15 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
  5. While the chicken cooks, season Brussels sprouts with olive oil, salt, and pepper, then add them to the air fryer. Cook for 8-10 minutes, shaking halfway through.
  6. Once the chicken is done, let it rest before slicing.
  7. Serve sliced chicken with crispy Brussels sprouts, drizzled with any remaining sweet chili sauce.

Notes

Serve with a side of jasmine rice or quinoa. Store leftovers in airtight containers in the fridge for up to 3 days, or freeze for up to 3 months.
