- 9 lasagna noodles
- 15 oz ricotta cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 medium zucchini, sliced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Sauté the zucchini, bell pepper, and garlic in a pan until tender.
- Mix the ricotta cheese with oregano, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta mixture, half of the sautéed vegetables, and a layer of mozzarella.
- Repeat the layering process, finishing with noodles, marinara sauce, and the remaining mozzarella and Parmesan on top.
- Bake for 30-35 minutes until bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
