Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a pan, add zucchini, bell pepper, and mushrooms, and sauté for 5 minutes.
  4. Add spinach, oregano, salt, and pepper, and cook until spinach wilts.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, followed by half of the vegetable mixture, half of the ricotta, and a layer of mozzarella.
