Description
A savory twist on classic soda bread golden, tender, and packed with sharp cheddar and fragrant herbs. No yeast or kneading required, making it the ultimate easy homemade bread.
Ingredients
2 cups all-purpose flour
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/4 cup cold butter, cubed
1 1/4 cups buttermilk
1 cup shredded sharp cheddar cheese
2 tbsp chopped fresh parsley
1 tbsp chopped chives (or 1 tsp dried)
1 egg, beaten (for brushing)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
3. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
4. Stir in the cheddar cheese, parsley, and chives.
5. Add the buttermilk and mix just until a sticky dough forms — do not overmix.
6. Turn dough out onto a lightly floured surface and gently shape into a round loaf about 2 inches thick.
7. Place on the prepared baking sheet and cut a deep “X” across the top.
8. Brush with the beaten egg for a golden crust.
9. Bake for 35–40 minutes, or until the bread is golden and sounds hollow when tapped on the bottom.
10. Cool on a wire rack for at least 15 minutes before slicing.
Notes
Serve warm with butter or alongside soups and stews.
Try adding a pinch of garlic powder or smoked paprika for extra flavor.
Leftovers make delicious toast or sandwich bread the next day.
