Description

A rich and hearty vegetarian lasagna featuring layers of pasta, ricotta cheese, and marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 medium zucchini, sliced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Sauté the zucchini, bell pepper, and garlic in a pan until tender.
  4. Mix the ricotta cheese with oregano, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta mixture, half of the sautéed vegetables, and a layer of mozzarella.
  7. Repeat the layering process, finishing with noodles, marinara sauce, and the remaining mozzarella and Parmesan on top.
  8. Bake for 30-35 minutes until bubbly and golden.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

For extra flavor, add fresh basil or spinach between the layers.
